Dani Cross, Level 3 Sommelier

 

CuCu YOLO

3 oz YOLO Silver muddled with cucumber shaken with ice and strained into Martini glass, top with Aligote and sliced cucumbers.

 

Dani YOLORita

1 oz YOLO Silver shaken and poured over ice in a Martini glass top with 3 oz Aligote and float ½ oz YOLO Gold on top with Lime wedge.

 

Dani YOLOMary

Per person

1 Fresh Tomato

½ Onion

2 cloves Garlic

1 inch grated ginger

½ inch grated Turmeric

2 anchovies

Squirt of Sriracha

Dash of Tamari Sauce

Blend until smooth, pour 1.5 oz YOLO Silver over ice in large glass and stir in blended veggies with celery stalk. Garnish with Roasted Mini Pepper Poppers and wedge of lime.

 

Kir

A twist on the classic Kir from Burgundy France. Traditional Kir is a splash of Cassis topped with Aligote. It is a favorite aperitif in Burgundy and is named for a former Priest and Mayor of Dijon who served the aperitif often. Kir Royale uses Champagne.

 

YOLO Kir

YOLO Red Currant Syrup (www.moderngingham.com) a unique blend of locally foraged currant syrup and ½ oz YOLO Silver in bottom of Aperitif glass, pour 3 oz Aligote chilled over syrup.

 

YOLO Kir Royale

Pour ½ oz YOLO Silver in bottom of Champagne flute top with ½ oz YOLO Red Currant Syrup (www.moderngingham.com) a unique blend of locally foraged currant syrup, and ¾ fill glass with 3 oz chilled Champagne Lancelot-Pienne.

 

YOLORia Blanca

Place ½ oz Blackberry Lavender Syrup in bottom of glass. Pour Shaken 1 oz YOLO Silver and 2 oz OJ on top, top with 3oz Domaine Gouffier Aligote. Add ice and float 1 oz YOLO Gold and ¼ oz Lavender Blackberry Preserves and Blackberries on top. Garnish with Orange slice.

 

YOLORia Rosa

Place ½ oz Blackberry Lavender Syrup in bottom of glass. Pour Shaken 1 oz YOLO Silver and 2 oz OJ on top, top with 3oz Domaine Ste Marie Vie Vite. Add ice and float 1 oz YOLO Gold and ¼ oz Lavender Blackberry Preserves and Blackberries on top. Garnish with Orange slice.

 

YOLORia Red

Place ½ oz Blackberry Lavender Syrup in bottom of glass. Pour Shaken 1 oz YOLO Silver and 2 oz OJ on top, top with 3oz Chateau Piote Bordeaux Rouge. Add ice and float 1 oz YOLO Gold and ¼ oz Lavender Blackberry Preserves and Blackberries on top.  Garnish with Orange slice.

 

Taste of Provence

1-2 Blackberries and ½ oz Blackberry Lavender Preserves (www.moderngingham.com) in a chilled martini glass, top with 3 oz Vie Vite Provence Rose and float ¼ oz YOLO Gold on top.

 

YOLO Sunrise

1 oz Currant Syrup/Blackberry Lavender Preserves in bottom of glass, Shake 1 oz YOLO GOLD and 3 oz fresh OJ and pour over and top with ice. Garnish with Orange slice.

 

YOLOTini Royale

Pour 2 oz YOLO Silver shaken into a chilled Martini glass, pour Champagne over and float 1oz YOLO Gold on top.

 

Stormy Dani

1/4 oz Grape and Ginger Preserves (www.moderngingham.com) in bottom of shot glass, pour in ½  oz YOLO Gold

Top with Champagne Lancelot-Pienne.

 

Warmy Stormy Dani

1/2 oz Grape and Ginger Preserves in mug with in 1 oz YOLO Gold

Top with warmed Vie Vite or Chateau de Piote Bordeaux Superieur


Mulled Wine

Reduce fresh grated Cinnamon, Nutmeg, Ginger, Turmeric and zest and juice of 2 oranges to half to make syrup.

Bring to warm (not boiling) 2 cups Chateau de Piote Bordeaux 

Mix 1/4 syrup, 1/2 cup warmed wine in mug and t
op with 1/4 oz YOLO Gold


Hot Buttered YOLO 
1 oz Butter mixed with to taste dry or fresh grated Cinnamon, Nutmeg, Ginger, Turmeric, Honey.

2 oz YOLO Gold 

Top with warmed Domaine Gouffier Aligote or Vie Vite and juice of orange and orange zest (strained).


8th Sin Toffee YOLO Float

In a Champagne flute alternate melon balled scoops of Chocolate Gelato and 8th Sin Toffee pieces, pour in one of Vin Boutique’s unique Champagnes or Prosecco to ¾ fill glass. Top with whipped cream, 8th Sin Toffe crumbles and pour  1oz YOLO Gold over top.
